In Hydroponic solutions, the readily available nutrients allow the plant to store reserves of major elements for future use (especially phosphorous).  This may affect the flavour of some fruit and vegetables.  Resulting in a "chemical taste".  High Production systems often result in product lacking in taste/aroma.  This is due to the plant growing faster that it can produce sugars and acids required for full flavour.

Plants can also absorb organic substances directly from the solution and either use them for energy or directly in growth.

If a hydroponic system is flushed with fresh water 7 - 10 days before harvest and no fresh nutrient is added, the plant will use its reserves of nutrients, thus reducing the level of chemicals stored within the plant.  Growth may reduce as the last of the plants reserves are reached.  This slowing of growth can be countered by using a "clearing solution.
